MICROWAVE PASTA!

I discovered this today and it made my life so much easier! All you have to do is measure out how much pasta you want, cover it with water, microwave on high uncovered for 9-10 minutes and drain! I was able to use the microwave in my dorm’s common room.

Now off to make some 300 calorie veggie packed extra cheesy baked ziti with my Smart Taste Pasta! :)

A super easy week night idea: prepare Rozoni Smart Taste pasta (170 calories), add 1/4 cup Roasted Tomato Garlic Sauce ( Classico brand, 30  cals), 1 cup microwave steam veggies 25 cals), 2 Tablespoons fat free milk (10 cals) and 2 tablespoons of parmesan (40 cals) for a quick creamy on the run 275 calorie dish!

Riia’s Vegan Tempeh Cakes

Ingredients:

8 ounce Tempeh (blended)

1/2 Oninon (chopped)

1/2 cup Green, Yellow, or Red Bell Peppers (chopped)

1 Green Onion (chopped)

1 Carrot (chopped)

3 Garlic Cloves (minced)

2 tbsp Parsley (chopped)

Dash of Cumin

Salt & Pepper to taste

How To:

Mix all ingredients together in a bowl. Form mixture into small cakes. Cook each side of “cake” on a greased pan until cooked thorough and browned on the outside. Enjoy! :)
